Vanilla, Maple, and Banana Oatmeal

Do you ever get stuck with your breakfast plans? Our oatmeal recipe is both nutritious and delicious, and it will blow your taste buds away. It’s so good, it will rival pancakes and eggs Benedict, yet it’s easier to prepare, especially for feeding several people at once.

Specifically designed for camping, it is made of ingredients that can be stored at room temperature.

  • Ingredients

    2 yellow, but not overripe bananas

    1 tablespoon oil

    2 1/2 cups coarse flaked oats

    6 + 1 cups your choice of plant-based milk

    1/3 cup maple syrup

    1 good quality vanilla bean split in half

    2 pinches salt

    Nut butter of your choice and crushed praline peanuts for garnish

  • Preparation

    • Peel the bananas and slice them in half lengthways.
    • Heat the oil in the Fondussimo bowl on setting 3, then caramelize the bananas for about 3 minutes on each side. Set aside.
    • Roast the oats on setting "5" for 3 to 5 minutes, stirring regularly.
    • Add six cups of plant milk, maple syrup, vanilla bean and salt, bring to a boil, then reduce to setting 1 and simmer for 15 minutes. If the oatmeal thickens too much, add milk to achieve the desired consistency.
    • Garnish with nut butter, caramelized banana halves and crushed praline peanuts, cover with lid for 5 minutes, then serve.

    A few tips

    • If you have access to a refrigerator, our vegetable milk of choice is unsweetened oat milk. Almond milk and soy milk offer interesting unrefrigerated alternatives.
    • The real secret of this recipe is the quality of the vanilla used! The Fondussimo team fell in love with Colibri Vanille from Papouasie Nouvelle-Guinée de Colibri Vanille. Of course, you can use 1-2 tsp. vanilla essence instead.
    • Serve the remaining vegetable milk to your guests, who can adjust the consistency of their porridge to their liking.
