Anyone who doesn't like waffles, raise your hand! Anyone? That's what we thought! This gourmet waffle recipe is inspired by our succulent Nanaimo fondue. To be enjoyed without moderation!

  • Ingredients

    250ml (1 cup) Nanaimo fondue

    8 pitted cherries

    1 quartered peach

    1 sliced starfruit

    For the waffles:

    250ml (1 cup) all-purpose flour

    45ml (3 tbsp. tablespoons) cornstarch

    5ml (1 teaspoon) baking powder

    30ml (2 tablespoons) maple syrup

    30ml (2 tablespoons) sugar

    2 eggs

    60ml (1/4 cup) canola oil

    5ml (1 teaspoon) vanilla extract

    250ml (1 cup) milk

  • Preparation

    1. Preheat a waffle iron according to the manufacturer's instructions.
    2. In a large bowl, combine flour, cornstarch and baking powder.
    3. In another bowl, beat maple syrup with sugar and eggs for 4 to 5 minutes with an electric mixer, until mixture whitens and doubles in volume. Gradually whisk in oil, vanilla and milk.
    4. Gradually add the dry ingredients to the wet ingredients and whisk until a lump-free batter forms.
    5. Spray waffle irons with cooking spray or brush with oil. Pour about 180ml (3/4 cup) batter into waffle iron. Cook for 2 to 3 minutes, until golden and crisp. Set aside on a plate. Repeat with remaining batter to make four waffles.
    6. Reheat fondue in a bain-marie or microwave.
    7. Garnish waffles with fondue and fruit.
